A short boat ride up the Moho River will bring you to the farm of our neighbor, Mr. Juan Cho. Carrying on the tradition of organic, sustainable farming from his father, Juan will lead you along trails of spiny bamboo and cacao orchards, handing you samples of the tart cacao fruit along the way. The cacao fruit produces a seed which, after roasting and fermenting, becomes the cocoa bean. On the second part of the tour you will follow Juan to his home in San Felipe to meet his family. Enjoy a traditional Maya dish for lunch, and then learn how Juan’s wife and mother roast, crush, winnow, and grind these beans to produce a delicious dark chocolate. |
